Collab On Healthy Eating: Miso Soup Recipe
I am thrilled to announce my latest post Collab On Healthy Eating: Miso Soup Recipe. This is Part 2 of my new collaboration with dear friend and fellow Lifestyle Blogger, Alicia Wood, of The Lush List. Here we will be focusing on healthy, easy to prepare recipes. For our first healthy eating edition we will be preparing a scrumptious bowl of Miso Soup. That honestly could not have come at a better time if you ask me, with all if the freezing cold weather and even snow that we’ve been experiencing. I hope that you all also enjoyed my last post MERRY NEW YEAR TO ALL + A NEW COLLAB ON FITNESS AND FOOD where we took you through a very simple at home workout routine using only two types of workout bands. Together we will share Alicia teaching me all about cooking healthy and I in return will teach her my love of exercise and working out. Because you honestly cannot have one without the other.
As many of you know I did not grow up with a Mother that cooked and that is why I never properly learned how to cook. Yes our family always tries to eat healthy but we eat out way too much. And even though we order and try to eat clean (most of the time) there are many hidden fats, toxins, sodium, sugars and oils at restaurants that are not good for us. You have much more control over where your food came from and exactly what’s in it when you cook for yourself. Not to mention it’s a lot less expensive than eating out as well.
For our first meal we chose something super easy for me to make that is one of our family favorites, Miso Soup. I turned out so great and I cannot wait to surprise my family and make it for them when we return home for the New Year. All you need is…
Ingredients For Ginger Miso Chicken Soup:
3 boxes of Miso Ginger Broth
1 1/2 cup of Edamame (can substitute snow peas if desired)
6 carrots, sliced
2 tbs fresh ginger, minced
4 cups dino kale (can substitute bok choy)
2 baked chicken breast, chopped (we used prepared chicken from Trader Joe’s. A roasted chicken would work as well.)
4 green onions, chopped

But I can tell you that we started off with a VERY simple recipe that anyone can do! And with all this freezing cold weather and snow flurries that we’ve been having I couldn’t think of anything else I’d rather be eating than a bowl of warm soup.
